Business and financial plans are not something that a great number of independent restaurant operators spend time or money on prior to opening their restaurants.  We believe that financial plans must be completed before buying property or leasing a space for a new restaurant.  Why?  Because when you “run the numbers” some locations are not feasible financially.  Not enough seats, high development cost and not enough capital are just some of the reasons restaurants fail after opening.

Judgment Day 9/11 Art Event February 25, 2012


Here’s the press release for our client Artist Nabil Mousa on February 22, 2012:   Artist Nabil Mousa Hosts Judgment Day 9/11 Public Art Event

Arab-American visual artist Nabil Mousa is holding an open house for his visual-art-for-social-change campaign surrounding his latest body of work entitled “Judgment Day 911”. The mural, being constructed at the Studio #16 space inside of the Mattress Factory Lofts, 300 Martin Luther King Jr. SE Atlanta, GA 30312, serves as a social tablet of free expression. The mural will be composed of nine wooden panels, interlocking to create 10ft x 50ft length wall with a culmination of religious symbols, imagery of the North and South Towers of the World Trade Center, as well as a collage of excerpts from the Qur’an, Bible and Torah.

From 11:00 AM to 3:00 PM on Saturday, February 25, 2012, the public is invited to work creatively along-side of Mousa and post memorabilia,news articles,photographs and handwritten thoughts expressing emotions surrounding the 9/11 attacks and the Iraq War.

Valentine’s Day: Romantic Dining in Atlanta


Valentine’s Day is less than a week away!  It’s that time of the year where your sweetheart gets treated to a romantic meal, maybe some flowers and a gift.  Reservations are pouring across the city at not only restaurants but florists, spas and a host of other retailers and boutiques.  We’ve got some great ideas for you that we know and your sweet heart will love.  Our clients are located across the city and the locations are as varied as the cuisine.  Here are four restaurant with menus designed with Valentine’s Day in mind:

FuegoMundo at the Prado offers authentic South American Cuisine that’s Kosher as well.  Recently in the voting for one of the top 10 Kosher restaurants in the US (announcement is next month), the cuisine is outstanding.  Unless we told you, you wouldn’t recognize that it Kosher by the cuisine or the decor.  All meats, poultry and fish are cooked on a wood-fire grill that is on display.  The sides are made daily from recipes brought back from Columbia and other countries in South America.

FuegoMundo is offering a four course meal including wine and a rose for $89 per couple (plus taxes & gratuity).  The menu is designed just for Valentines with an extensive number of choices to customize your meal.  The deluxe package includes:  Valentines Day 4-Course Dinner for 2 at FuegoMundo, bouquet of Red or Pink Roses, and a divine couples massage at Nava Sen Spa in East Cobb for $249.00/couple (plus taxes & gratuity).

Heading south to Buckhead, Imperial Fez Moroccan Restaurant has two five course meals available for you to choose from on the menu.  Chef Rafih Benjelloun will prepare a Moroccan feast for two in one of Atlanta’s Most Romantic settings.  Imperial Fez has been recognized locally as a top destination in Atlanta for a romantic dining experience.  Now open in Colorado, Imperial Fez has a location in Louisville.

In Decatur, Sprig Restaurant has a four course meal planned for $55 with an optional wine pairing for an additional $25. The menu includes locally sourced ingredients with Chef Britt Cloud’s southern flare. Sprig recently released their winter menu with many entrees now available in half portions to encourage grazing.

No matter where you are or what cuisine you’re interested in having for Valentine’s Day, we’re sure that one of these four restaurants will be a hit!

Beer Education and Consulting with Brewgasm


Goliath Consulting Group is excited to announce our newest alliance:

Anne Fitten Glenn is going to be conducting beer education classes and beer tastings in the Atlanta area.  Glenn will also be assisting Goliath with consulting to restaurants on building craft beer lists that compliment the restaurant’s menu.

Anne Fitten Glenn (aka Brewgasm) is the beer columnist for Asheville’s newsweekly and a regular contributor to CraftBeer.com. She’s also a certified Cicerone beer server and home brewer, who has developed and teaches beer education classes for both servers and the general beer-loving public. Glenn has a biweekly radio spot discussing beer. She also frequently presents at beer dinners, tastings, festivals, and conferences. Knowing beer to sell beer: educating your staff so they can best sell beer, increasing both sales and tips

Most restaurant and bar owners understand that offering a diverse beer list, including a variety of locally made craft beers, can increase their profits (Asheville’s Moe’s BBQ increased beer sales by 300 percent in less than six months after diversifying their beer selection).

But the most well-intentioned beer list can fail if servers don’t know how to sell it. Servers need to understand beer styles and characteristics to discuss the drink with increasingly beer-savvy customers. They also need to know which beers are brewed locally to satisfy beer tourists showing up for a taste.

This Beer 101 course covers beer styles, beer serving etiquette, classic beer and food pairing ideas and more. Glenn has taught the class to groups as small as five and as large as 30. When she teaches in small groups in specific restaurants, she talks to owners and managers beforehand to figure out what they most need their servers to learn and understand about beer.

After taking the class, servers can go on-line and take Glenn’s short Beer 101 exam. If they pass with 70 percent or higher, they can call themselves Certified Beer Servers.

Cost is typically $10 per person per hour, with a $100 minimum. Depending on the size of the group, the class runs 2 to 3 hours (typically 2 hours for individual restaurant consults).

New Year’s Eve Dining Options plus BCS Bowl Game Food Options


It’s hard to believe the year is almost over!  This weekend is a great opportunity to Eat, Enjoy and Ring-in the New Year.  Here are some dining options and places to pick up some great football watching snacks.

For an exotic dining experience on New Year’s Eve, make your reservations now at Imperial Fez Moroccan Restaurant.  Slip away to Morocco and enjoy a five course meal with a champagne toast while belly dancers make their way around the authentic dining room like no other.  Chef Rafih Benjelloun will take you on a culinary journey that will excite your taste buds and delight you.  There is a 6:30 pm and 9:00 pm seating.  The cost is $55 per person with a children’s menu at $30 per person.

For Southern Cuisine using the best ingredients available locally, go to Sprig Restaurant in Decatur for New Year’s Eve.  Chef Britt Cloud has prepared a special three course menu just for NYE.  The restaurant has two seatings at 7 pm and 9 pm.   The cost per person is $45 and includes a champagne toast.  Eat Fresh, Eat Local!

Wings!  Mrs. Winner’s in Stockbridge has some of the best wings on the Southside of Atlanta.  Choose from Buffalo, Lemon Pepper or Barbecue.  Get them in quantities from 5 to 50 and take them to your football watching party.  Great for tailgating too!

Exciting Christmas Dining Options

Celebrating the restaurant’s first year in the Oak Grove area of Decatur, Georgia, owners Anthony and Jennifer Tiberia have made some exciting changes at Sprig Restaurant.

Britt Cloud has been promoted to Chef de Cuisine and Nick Ladikos has been hired as General Manager at Sprig Restaurant in Decatur Georgia.  The new Fall Menu includes seasonal favorites and now features half-portions to allow guests the flexibility to sample more of the menu.  Additional changes include an expanded outside patio and new décor highlights in the dining room.  These changes reflect the casual, neighborhood feel the Anthony and Jennifer want the restaurant to convey.

Chef Cloud has worked in restaurants in Washington D.C. and Atlanta including Table 1280, Dick and Harry’s and Commune. At Sprig, Chef Cloud is creating comfort food that is rustic and approachable, but also refined and contemporary using fresh, local ingredients.    General Manager Nick Ladikos brings a focus on service that he learned working for a family restaurant in Florida.  Working with owners Anthony and Jennifer who also live in the area, the new team is confident they will deliver the same service and food quality that Sprig is known for in the area.
